Bright red with hint of purple with aromas of red fruit followed by hints of menthol and light smoke. A well-balanced wine, with good acidity and structure, an aromatic finish with fine tannins. From an excellent small outfit, Les Vignes D'Oc, run by the charismatic and talented duo, Daniel Orsolini and Claude Serra, who is also professor at Montpellier University of Oenology, this wine show real varietal character. Grown on a chalk/marl mix in vineyards to the west of Montpellier, the grapes are manually harvested with integral de-stemming. After a short, cold maceration (5 days at 10°C), the fermentation is temperature-controlled at 25°C maximum. Maturation is a mix of 80% in tank and 20% in oak barrels for a minimum of 3 months.
